Carrot Apple Pecan Cake Overnight Oats

Depending on how you are wanting  your overnight oats texture to be, you can use wholegrain organic oats as per recipe which will give a chewier texture,
If you want a softer overnight oats recipe, use regular rolled oats (not quick cooking oats.)

 

  1. Add apples. 3 sec, speed 4. Remove and set aside.
  2. Add carrot. 3 sec, speed 6 Add pecans. 3 sec, speed 4.
  3. Add apples back in along with all remaining ingredients, except yoghurt. 14 seconds, reverse speed 3.
  4. Divide mixture into desired serving sizes, cover and place into fridge for minimum of two hours, or over night.
  5. Top with your yoghurt. Serve.
